Oreo Truffle Brownies

I needed to take a dessert somewhere on Sunday evening and found this treasure on my dessert board on Pinterest.  (In case you haven't figured it out yet, I am an addict)
This is a combination of Oreo balls and brownies.  What could be better?  Jacob actually doesn't care for brownies too much and usually passes them up.  Not this time.  There were only 2 leftover and he laid claim to both of them for his lunch this week.  I know, I know.  I'm just thinking it's better that they go to his waist than mine :)  Original recipe from chef-in-training.com

Oreo Truffle Brownies
1 c. butter
2 c. sugar
4 eggs
1 tsp. vanilla
1/2 c. unsweetened cocoa
1 1/3 c. flour
1/2 t. salt
1 pkg. double stuffed Oreos
**(I used the Mega stuffed-limited edition)
4 oz. (or more) cream cheese
10 oz. chocolate chips
**(I used 1/2 white chips & 1/2 semisweet chips)

1. Preheat oven to 350.  Cream butter & sugar together.  Add eggs and blend well.  Add vanilla, salt, cocoa, & flour.  Do not overbeat.  Pour into greased 9 x 13 pan.  Bake for 20-25 minutes and let cool completely.
2. To make truffle layer, crush oreos.  I used my food processor for this and it worked awesome.  Set aside about 1/2 c. to sprinkle on top.  Mix in 4 oz. softened cream cheese.  You can add more cream cheese if you want, I didn't think it needed it.  You will have to kind of pat the truffle layer on.  And spread it around with your fingers. 
3. Melt chocolate and spread evenly on top.  Sprinkle with remaining Oreo crumbs.


I am not kidding when I say everyone will LOVE these bars.  I served them with ice cream and chocolate sauce.  I personally think they are delicious without the added toppings, but a little ice cream never hurt anyone:)  I had numerous people rave over these and request the recipe.  You will too.  I guarantee it.

Spring Cleaning Time

It's that time of year when I get all excited about spring cleaning and organizing.  As soon as the weather turns nice, I want to open my windows and start cleaning out everyroom in our house.  My list for this year;  I better get down to business!

Bake Sale

At the bank we did a bake sale to raise money for Relay for Life.  Between the different things I made, the camo cupcakes went out the door fast.  Here are a few pictures from our bake sale.
This was totally an experiment.  At this point I was afraid they weren't going to turn out.  I just divided my white cake batter into 4 parts.  Dyed one brown, black, tan, and green.  I would do something a little different with the green next time I do it.  It wasn't "army" enough.

I was really excited how they turned out when I took them out of the oven though.  They looked so cool!
 


Our bake sale table at the bank.  I made a banner with "Bake Sale" on it and bought several containers from Dollar Tree to spruce it up.

Awesome idea I saw on Pinterest.  Put the cupcakes in short clear plastic cups and wrap with cellophane.  I just put them in a cellophane bag.  It helps keep the frosting from touching the wrap.

We sold out at our bake sale by 2:00.  I will have to do more baking next Friday for our second one.  It's amazing to me how much people are willing to pay for home baked goodies.  After doing this post, all I want is a cupcake for supper :)
